Puerto Rican Cuisine

Puerto Rico has some of the best food I've ever eaten! I was surprised at how diverse the food selection was and how great it tasted!  Truthfully, I'm not sure what I expected but let's just say I was pleasantly surprised.
Below is a list of my top three favorite restaurants (in no order) which Andrew, our friends, and I dined while visiting the island.
  •  La Estacion is a restaurant in Northern Puerto Rico.  "La Estacion" translates to The Station having received it's name because the restaurant used to be an old gas station.  This place has a really unique vibe and most of the seating is outside. Upon arrival at La Estacion, the fisherman were getting the daily catch out of their coolers.  The restaurant uses products produced on the island and the fish come from local waters. The day that we ate at the restaurant, the fisherman's coolers were filled with live lobsters!  These were the largest lobsters I have ever seen (see picture for proof).  Every guest at our table ordered the lobster tail and fresh catch of the day.  This place captures the true flavor of the Caribbean, I just wish we'd found it earlier on our trip!
  • Bistro del Mar is a food truck that resides mainly in Fajarado. Marina, the chef, and Juan, the bartender, work seamlessly together.  Fajardo is the area where we kayaked the bio-luminescent bay.  After a two hour kayaking trip we were starving and began earnestly searching for something good to eat!  We found that Bistro del Mar had 4.9 stars and was literally in walking distance of our kayaking excursion.  Andrew and I had shared empanadas as an appetizer and they were the best I've ever tasted.  For our meal, we ordered chicken and steak stuffed pineapple.  The food was to die for, and the best part is that it's made right in front of you!
  • Greenhouse Cafe Dorado is a restaurant close to our resort.  Andrew and I got to the resort a bit earlier than our friends so we were on our own for dinner the first night.  We wanted to try something local and this cafe was recommended to us by our hotel staff.  We were not disappointed with the recommendation.  The food was great, the staff was kind, and we were waited on in a timely manner.  The best part of this meal is the little sopapilla on top.  A lady inside the cafe was hand cutting a message into each sopapilla.  We happen to be there the week before Valentine's day so our message said, "Feliz San Valentin."  This place was on of the only local places in the vicinity of our resort and it was so good we ended up eating there twice.
If you're ever in Puerto Rico you've got to try these restaurants.  If you aren't able to get to one that I've named then you at least have to try some of the local dishes including: Mofongo, empanadas, plantains, and any of the fresh fish.
My mouth is officially watering and I'm wondering if I can find any good recipes to make a Puerto Rican dish?!
